
The Story
This dish turns simple duck eggs into something deeply comforting, simmered in a rich, spiced sauce until every bite is full of flavor. It’s the kind of meal that feels both humble and special, often shared at the table with rice, bringing warmth and satisfaction to everyday life.

Place 12 duck eggs in a pot and cover them with water.

Add 1 tablespoon of salt to the pot and bring the water to a full boil over medium-high heat.

Once the water reaches a boil, reduce the heat slightly and let the eggs cook for 10 to 12 minutes.

After cooking, remove the pot from heat and rinse the eggs under cold running water to stop the cooking process.

Carefully peel off the cover of each egg and use a knife to make a shallow mark around the circumference of each egg or cut them in half

Set the marked eggs aside while you prepare the aromatics.

Peel and chop 2 large onions and 6 garlic cloves, then blend them into a smooth mixture.

Heat 90ml of oil in a large pan over medium heat until shimmering.

Add the blended onion and garlic mixture to the hot oil and sauté until fragrant and the oil starts to separate, approximately 5 to 7 minutes.

Stir in 1 tablespoon of turmeric powder and 3 tablespoons of paprika, cooking for an additional minute to combine the spices.

Add 2 tablespoons of fish sauce, 1 tablespoon of salt, 1 tablespoon of MSG, and 1 tablespoon of tamarind dissolved in water into the pan, stirring well to create a strong base.

Carefully add the marked duck eggs to the pan and gently coat them with the sauce.

Cook the eggs in the sauce for 5 to 10 minutes, allowing them to absorb the flavors. Add the chopped Green chili to your spicy tolerance

Taste the sauce and add more fish sauce if needed to suit your preference.

Once the flavors are to your liking, remove the pan from heat and serve the dish hot with white rice.
