
The Story
A comforting home-style pork curry slowly cooked with spices and potatoes, bringing out deep, hearty flavors in every bite, just like a warm meal shared at home.
Instructions

Cut 1.5 lbs of pork shoulder into moderate-sized pieces and place them in a large mixing bowl.

Marinate the pork with 1 tablespoon of salt, 1 tablespoon of MSG, ½ tablespoon of turmeric powder, and 1 tablespoon of masala (if using).

Smashed or blend 2 large onions, 6 garlic cloves, and 1 stem of ginger until smooth.

In a large pot or pan, heat 90 ml of cooking oil over medium heat.

Add ½ tablespoon of turmeric powder to the oil and 2tbsp of paprika stir to combine.

Add the blended aromatic mixture to the pot and sauté until fragrant, stirring occasionally, until the oil separates from the mixture, about 10-15 minutes.

Add the marinated pork to the pot, stirring well to combine with the aromatic mixture.

Cook the pork until it releases its moisture and begins to dry out, about 10-15 minutes.

Add enough water to cover the pork and bring to a simmer.

Cook until the water evaporates, then repeat this process until the pork is tender, which may take about 1-1.5 hours.

Once the pork is soft, add 4 large potatoes cut into big pieces.

Pour in a little water and continue cooking until the potatoes are soft, about 15-20 minutes.

Adjust the taste of the dish as needed with fish sauce or additional salt before serving.
