A comforting Myanmar-style pork curry slowly cooked with aromatic spices and sour bamboo shoots, bringing together rich, tender meat and a tangy kick in every bite.

Cut 1.5 lbs of pork into moderate-sized pieces and place them in a large pot.

Smashed or blend one large onion, five garlic cloves, one stem of ginger, and seven chili peppers, adjusting the amount based on your spice tolerance.

Add the blended mixture to the pot with the pork.

Sprinkle in 1 tablespoon of salt, a pinch of MSG, 1 tablespoon of chicken powder, 2 tablespoons of fish sauce, and 1/2 tablespoon of turmeric powder.

Pour in 2 tablespoons of oil and mix all the ingredients well.

Set the pot over high heat and cook until the moisture from the meat has evaporated and the pot is dry.

Reduce the heat to medium and add enough water to cover the meat.

Cook until the water has evaporated, then repeat this process twice or until the meat becomes tender.
