This is a simple home-style stew that builds flavor slowly, from aromatic turmeric oil to a rich broth made by simmering chicken until tender. Season the chicken drumsticks with 1 tablespoon of salt, 1 tablespoon of MSG, and 1/2 tablespoon of turmeric powder in a bowl.

Chop 1 large onion, mince 1 whole garlic, and finely cut 1 stem of ginger.

Slice 8 chili peppers according to your spice tolerance and wash some cilantro for garnish.

Peel 1 large gourd, remove the inner part, and cut it into pieces.

In a large pot, heat 30 milliliters of oil over medium heat.

Add 1/2 tablespoon of turmeric powder, the chopped onion, minced garlic, ginger, and sliced chili peppers to the pot.

Stir and cook the ingredients until they become fragrant, about 3-5 minutes.

Add the seasoned chicken drumsticks to the pot and cook until the water from the chicken evaporates and the chicken is browned, stirring occasionally.

Pour in enough water to cover the chicken, then cover the pot and let it cook for 30 minutes, allowing the water to reduce.

Once the water is mostly evaporated, add the cut gourd pieces to the pot and stir to combine.
