
The Story
In Myanmar, anchovies are enjoyed in many simple, comforting ways, whether as quick lone chat or richer si byan, each version brings bold flavor and a taste of home to the table.
Instructions

Wash 40g of anchovies thoroughly under cold water.

Cut 4 tomatoes into your preferred shape, such as wedges or chunks.

Slice 2 shallots thinly.

Cut 6 green chilies in half lengthwise.

In a small pot, combine the washed anchovies, cut tomatoes, sliced shallots, halved green chilies, 1/2 tablespoon of turmeric powder, 1 tablespoon of salt, 1 tablespoon of MSG, 1 tablespoon of paprika, 1 tablespoon of oil, and 1 tablespoon of fish sauce.

Add 3 tablespoons of water to the pot.

Place the pot on the stove and heat over medium heat.

Cook the mixture for 15 minutes, stirring occasionally.

Continue cooking until all the tomatoes have softened and the mixture has reached a sauce-like consistency.

Serve the dish warm with rice.
